Pork Tongues - 2 Tongues / Package

Three suggested cooking methods:

A) Wash the whole tongue in cold water, put in a pot, cover with hot water. Bring water to a boil, reduce to a simmer, simmer for about 2 hours or until meat is tender. Put in cold water to cool. Peel the skin off. Trim off any gristle. Slice. OR
B) In a pressure cooker, place washed whole tongue in pressure cooker, put in enough water just to cover, put top on pressure cooker, bring to pressure, and cook for about 30 minutes or more (optional: a teaspoon or two of pickling spice in the water.) Put tongue in cold water to cool. Peel the skin off. Trim off any gristle. Slice. OR
C) Blanch the tongue first, cool, then trim and peel skin off, slice and cook slices under pressure in pressure cooker for 10 minutes, then fry in oil until lightly browned.
